Our supercentenial trees produce table olives of Kalamata variety. In our land they are also known as the olives of the eagle’s claw. They are gathered with caution and care to avoid any scratching of the fruit and the selection is based on strict quality characteristics. According to the old simple recipe, they are left to ferment with plain water and salt with no preservatives or other substances.
